
Ingredients
- 1 Courgette, grated
- 275g Self Raising Flour
- 100g Pilgrims Choice, Mature/Extra Mature/Vintage, grated
- 1 Large Free Range Egg
- 30g Butter, melted
- 250ml Milk
- Salt and Pepper, to taste
Method
- Preheat the oven to 200C/180C fan/gas 6. Line a 12 hole muffin tin with muffin cases.
- Mix together the Flour, egg and milk to form a thick batter. Add the remaining ingredients and mix well
- Spoon the batter evenly in the muffin cases and bake for 20-25 minutes until golden and firm. Great warm still make a great snack after they have cooled
