Caramelised Pineapple & Vintage Cheddar
The method:
1. Cut pineapple into generous 2.5–3cm chunks.
2. Melt butter with brown sugar until bubbling. Add pineapple and cook for 5 minutes until coated
and sticky.
3. Lay it on greaseproof paper to cool. For extra edge, char it under a grill or with a blowtorch.
4. Skewer each pineapple chunk with a cube of Vintage Cheddar. Finish with a sprinkle of smoked
sea salt.
