Cheddar Courgette Muffins


  • 1 Courgette, grated
  • 275g Self Raising Flour
  • 100g Pilgrims Choice, Mature/Extra Mature/Vintage, grated
  • 1 Large Free Range Egg
  • 30g Butter, melted
  • 250ml Milk
  • Salt and Pepper, to taste


  1. Preheat the oven to 200C/180C fan/gas 6. Line a 12 hole muffin tin with muffin cases.
  2. Mix together the Flour, egg and milk to form a thick batter. Add the remaining ingredients and mix well
  3. Spoon the batter evenly in the muffin cases and bake for 20-25 minutes until golden and firm. Great warm still make a great snack after they have cooled
