Kimchi Mac & Cheese

Ingredients

Gochujang Cheese Sauce:
• 2 tbsp butter
• 3 tbsp plain flour
• 500ml whole milk
• 300g Pilgrims Choice Mature Cheddar
• 50g gochujang

Main:
• 350g macaroni
• 400g kimchi
• 4 spring onions
• 4 eggs

Method

Let’s go:
1. Cook macaroni for 7 minutes. Drain.
2. For the sauce: melt butter, stir in flour, then slowly whisk in the milk. Once thick, add Pilgrims
Choice Mature and gochujang. Stir until smooth.
3. Mix macaroni, kimchi, and cheese sauce together. Pour into a dish and top with more cheddar.
4. Bake at 180°C for 30 minutes until bubbling and golden.
5. Top with a fried egg, spring onions, crispy onions and a drizzle of Korean BBQ sauce.
