Twice Baked Breakfast Jackets

Ingredients

For the Jackets; Or use leftovers

  • 2 Large Baking Potatoes
  • 1 tbsp Olive Oil
  • Pinch of Sea Salt

For the filling;

  • 4 Rashers of streaky Bacon, cooked until crisp
  • 50g Pilgrims Choice Cheddar, Mature/Extra Mature/Vintage, grated
  • 4 Medium Eggs
  • 1 tbsp Chives, roughly chopped

Method

  1. Pre-heat the oven to 200C/180C Fan/Gas Mark Prick the potatoes with a fork, rub with olive oil and sprinkle with salt.
  2. Bake for 40-45 minutes until tender and crisp. Cook the bacon alongside for the last 10 Mins
  3. Once cool, halve and scoop out the centre and discard. Lay in the cooked bacon and crack an egg in the centre.
  4. Top with the grated cheese and chopped chives and bake for 18-20 mins.
